Meal Plan Monday – Week 4

Phew you guys! This week is going to be crazy for us. To start, I’ve already done my grocery shopping…on Sunday…after church. This is my absolute worst nightmare to face EVERYBODY at HEB on my weekend, but we did it. I threw together a meal plan for our 4th week of Paleo and/or Whole 30 dinners. This week is a bit different because I feel like I have a bit of a grasp of how to cook loosely following these diet plans. Mostly meat and veggies, no dairy, no grains, and again lots of veggies. So be patient because I’m tweaking some of my favorite recipes and I’m going to link to my own blog post about those!

We are also going out one night this week while the kids spend the night at Grandma’s house so I’m noting leftovers and only three dinners. In addition we are back in the swing of working full time. My husband is a teacher and leaves the house by 6:15 AM each morning. I DO NOT have the love in my heart to be up making him breakfast but I love him enough to make some Freezer Breakfast Sandwiches. These are not Paleo or Whole 30 because they are made with whole wheat English muffins, but the man has to eat and these egg casserole recipes without cheese and milk are not floating his boat! So here we go!!

MONDAY: Veggies and Meatballs with Marinara

TUESDAY: Burrito Bowls with Cauliflower Rice

WEDNESDAY: Crockpot Gumbo

THURSDAY: Leftovers

FRIDAY: Freezer Breakfast Sandwiches


Veggies and Meatballs with Marinara. Okay this marinara sauce is my absolute favorite. The recipe calls for a crockpot but I’ve also made this on the stovetop and simmered for 1 – 2 hours. So I sautéed a ton of mushrooms, squash, zucchini, onions, bell peppers, etc. basically cleaned out my produce drawer. Then I pulled some of those meatballs from last week (remember when I said make extra and freeze them!) I tossed the veggies in the bottom of a bowl, spooned marinara on top and added 4 meatballs to each bowl. Let me tell you. I made this up last minute. I also love pasta…like it’s one of the greatest love stories of my life. I’ve been missing my pasta and whoa did this little meal hit the spot! Probably my favorite meal so far in this Meal Plan Monday journey!

Crockpot Gumbo…I’m excited! We bought frozen shrimp and fresh okra as opposed to fresh shrimp and frozen okra. It was cheaper that way and there is enough love for Cajun in Texas that we have fresh okra. If you’re not from Texas and can’t find fresh okra then get the frozen. If you don’t like okra, especially fried okra then this might not be the place for you. Crockpot is always the answer, so this should be good!

Freezer Breakfast Sandwiches are the hands down best and the linked post is the best for answering any and all questions about how to do this. I use a large muffin tin bat has six cups. I also make these a variety of ways with sausage, bacon, and just cheese. Whatever I have on hand I will throw in there. I’ve made these for 4 years now and they last for up to a month in the freezer. If you have the will power to make for than 36 of these suckers, let me know how they do after 2 months in the freezer!! I made a dozen this time.

Here is my budget tips for this week. Always skim the meat aisle. Walk slowly…there is always something marked down for a quick sale at my store. Currently I have 2 hot breakfast sausage logs, Italian sausage, and bacon in my freezer. They were all on quick sale at some point. Grab it and freeze it. When I say use what you have on hand/clean out the drawer/and so on, dig around. Add these to your breakfast sandwiches! Also buy the bags of onion. I cook with a yellow onion almost every freaking day, I always have 5 or more onions in my pantry.

  • 4 yellow squash
  • 4 zucchini
  • 4 bell peppers
  • Jalapeño
  • Head of green leaf lettuce
  • Head of cauliflower
  • 2 limes
  • Cilantro
  • Mango pico de gallo (HEB is the best)
  • 2 avocado
  • Celery
  • Okra
  • 1 lb shrimp
  • 1/2 lb sausage
  • Black olives
  • 2 28 oz cans crushed tomatoes
  • 2 cans tomato paste
  • Can diced tomatoes
  • Bay leaves
  • 2 packs of English muffins
  • Dozen eggs

Things I have on hand

  • Mushrooms
  • 4 onions
  • Minced garlic
  • Cheddar slices
  • Olive oil
  • Chicken stock
  • Sea salt and pepper
  • Ground beef
  • Chicken breasts
  • Chili powder
  • Cumin
  • Oregano
  • Paprika
  • Dried basil
  • Cajun Seasoning
  • Cayenne
  • Thyme
  • Brown sugar
  • Balsamic vinegar
